This book emphasises on the natural language acquisition technique, as everything in there is written in Latin. Connor has nearly finished Lingua Latina: Familia Romana. Lingva Latina: Interactive Latin Course. The recommendation of Seamus, I have invested in a wonderful textbook called Lingua Latina per se Illustrata. As for Lingua Latina, I shy away from immersion-style, though if the reading were coupled with a grammar course, that might be interesting. There is no English in the entire book, you are simply immersed in Latin from page one.
